Rhubarb, Rhubarb...


Spring is here and that means it's the season of harvesting rhubarb.

Before last year rhubarb was but a distant memory for me. I remember having rhubarb crumble occasionally as a child but as we didn't have a plant, these times were few and far between.

This changed last year when we inherited our allotment and found 4 rhubarb plants buried in the undergrowth. Now however we have gone from one extreme to the other and we have so much rhubarb I'm not entirely sure what to do with it all!

Rhubarb crumble is the obvious answer but there is only so much crumble I can eat without it affecting my waistline! I did a search today and came up with a recipe for Rhubarb cake from http://www.allotment.org.uk/. I made it earlier and it was absolutely delicious but again another one for moderation I think.

I think the only option at the moment is to freeze as much as possible and make sweet things with it for a nice treat...unless anyone has any healthy recipes for rhubarb?

Not that much healther but jam would keep for longer? I've never tried it myself, I don't really like jam, but have read about it. You could also try rhubarb wine.

Like you, I'm not too much of a Jam fan, we're still trying to eat our way through last year's blackcurrent and blackberry jam but thank you for the advice. I might take a look into the rhubarb wine and selling the excess for our local pre-school might be an idea as well.
