I've had a few days of being under the weather recently, once again I came down with the dreaded tonsillitis. I normally just grin and bear it but this time a friend recommended garlic soup to me and sure enough after just 24hours I was already feeling a lot better. Now I not sure if it was the soup or not, but it certainly tasted nice and didn't do any harm. Here's the recipe...
Garlic Soup
1/2 Bulb of raw garlic (roughly chopped)
1 large Onion (chopped)
1 lb of Potatoes (peeled and chopped into small cubes)
1 litre of chicken stock (homemade if poss)
Enough olive oil to fry the onions
Fresh Herbs - I used oregano as this is meant to be good for sore throats
Heat the oil in a large pan. Add the garlic to the pan, cover and cook gently for a few minutes.
Add the onion and stir well. Cover again and cook gently for a further 5 minutes
Add the potatoes, stir and coat them in as much of the oil as possible. Cover and cook for about 10 mins, stirring occassionally.
Add the chicken stock and simmer gently for 20 mins or until the potatoes are cooked
Blend using a hand blender, add herbs and season to taste.
